The Peppermint White Chocolate adds to the Christmas scene on our shelf – but it won’t be there for long!

Why didn’t someone tell me that Christmas is just over 2 weeks away???  Yes, the house is decorated, but no presents are bought, and not one cookie has been made.

In continuation of our theme of ‘The Farm’, we try to simplify our lives as much as possible, even around the holidays.It seems that no matter what we do, Christmas tends to sneak up on us and before we know it, we are in the hustle and bustle of getting everything done before December 25th.

We value the true meaning of Christmas, and enjoy being with friends and family most of all.  So, as life must go on during the holiday season, we try to make things as easy as possible to not fall in the trap of being overwhelmed.  Now I love to bake as much as I love to garden.  However, at this point in my life, I don’t have time to spend hours in the kitchen making that perfectly decorated sugar cookie.  This is why I choose to make these Holiday desserts – because it takes little prep time (both of these recipes took less than 30 minutes to prepare – including unwrapping the candies), and they are absolutely delicious!!!  Over the next two weeks, I will reveal our 4 most popular, yet quick fixing, desserts that will be a great addition to your holiday cookie trays.

Holiday cookies

PEPPERMINT-WHITE CHOCOLATE BARS

Ingredients
24 round red and/or green hard peppermint candies
2 (12-oz.) packages white chocolate morsels
1 teaspoon peppermint extract

Directions:

Line 3 (9″ x 5″) loaf pans with multipurpose sealing wrap (such as Press n’ seal); set aside.  Hint: You can also use disposable loaf pans found in most grocery stores if preferred.

Place candies in a zip-top plastic freezer bag. Coarsely crush candies using a meat mallet or rolling pin. Set aside crushed candies, reserving 3 Tbsp. separately for topping.

Microwave white chocolate morsels in a large microwave-safe bowl  for 1 minute and 15 seconds. (Morsels will not look melted.) Stir morsels until melted. Microwave again at 15-second intervals, if necessary.

Add peppermint extract and larger portion of crushed candies to melted chocolate, stirring until evenly distributed.

Quickly spread melted white chocolate evenly in prepared pans; sprinkle with reserved 3 Tbsp. candies, pressing gently with fingertips.

Let stand 1 hour or until hard.

Rudolph’s Nose – Chocolate Pretzel Treat

  • Bite-size, waffle-shaped pretzels
  • Hershey’s Kiss or Hershey’s Hug
  • M&M’s candy
  1. Heat the oven to 170F. Set a number of bite-size, waffle-shaped pretzels (one for each treat) in a single layer on a cookie sheet lined with parchment paper, then top each pretzel with an unwrapped Hershey’s Kiss or Hershey’s Hug.
  2. Bake for 4 to 6 minutes (the white chocolate will melt more quickly), until the chocolates feel soft when touched with a wooden spoon. Remove the cookie sheet from the oven and quickly press an M&M’s candy into the center of each Kiss.
  3. Allow the treats to cool for a few minutes, then place them in the refrigerator to set, about 10 minutes.
