Chicken and Waffles Recipe – Southern Comfort!

I love waffles, and I love chicken. But when I first heard of having a meal putting those two classic foods together, I was more than skeptical.

That is of course until about a year ago when Jim and I made a trip south to a Belgium style restaurant. As we waited patiently to be seated when we began to talk to fellow patrons to see what we should order. The common theme was the discussion of their prize dish – chicken and waffles.  I could hardly think that the combination would be worth all the talk. That all changed when I saw the plate being served. – and then and there, I wanted a chicken and waffles recipe!

The beauty of a breaded chicken breast draped over a classic Belgium waffle made my mouth water. And as the plate went past me, I could smell the maple syrup that was sweetly drizzled over both the tender chicken breast and the waffle itself.  I could hardly wait until it was our turn to order.  Needless to say, our plates were left empty.

So as we had a few rainy nights where we were stuck in the house, dreaming of working out at the farm, we decided to give the classic southern comfort dish a try in our own kitchen.  It does take a little planning – requiring an overnight soak in a buttermilk marinade, but it’s well worth the wait.  We even used our own homemade waffle mix recipe to make the waffles.

So if you have never had chicken and waffles, you have to give this recipe a try.  Just don’t count the calories!

Chicken and Waffles Recipe

Pound chicken breasts until even.

Ingredients:
2 Chicken Breasts (Pounded thin)
2 Cups Buttermilk
1 Tbs Paprika
1 Tbs Kosher Salt
1 Tbs Pepper
1 Tbs Onion Powder
1/2 Tbs Garlic Powder

DREDGING INGREDIENTS:
3 cups Flour
1 Tbs Paprika
1 Tbs Kosher Salt
1 Tbs Pepper

1 Quart Vegetable Oil for frying

Instructions:

Pour marinade over chicken breasts and refrigerate for an hour - it's well worth the wait!

1. Place chicken breasts between two sheets of plastic wrap. Pound each breast until they are even.

2. In a medium bowl add buttermilk*, paprika, salt, pepper, onion powder and garlic powder. Mix well.  **to make your own buttermilk, add 1 tablespoon of lemon juice or white vinegar to a measuring cup. Add enough room temperature (70 degree F) milk to make one cup. Let sit 5 minutes.  Use as much as your recipe calls for.

3. Pour buttermilk mixture over chicken breasts. Refrigerate for 24 hours.

4. When you are ready to prepare your chicken: mix together the Dredging Ingredients and place in a shallow pan (pie pans work great).

5. Heat vegetable oil to 350 degrees. (medium heat for about 7 minutes).  Coat each piece of chicken in the flour mixture and place into the oil.  Heat for approximately 5 minutes on each side.

6. While the chicken is frying, make waffles.

7. Drain chicken on paper towel. Place a piece of chicken over a waffle and drizzle with pure maple syrup.  Let the drooling begin!!!
