Delicious Veggie Black Bean Burger Recipe – Healthy Eating At Its Best!

Never say never. If you asked either of us a year ago if we would even consider eating a black bean burger, we would have looked at you strangely, and quickly say no!

Well, as we continue to grow and learn, we both decided it was time that we gave it a shot.

As the new year continues, many of our readers strive to continue their resolutions to both live healthier and to save money. This is a terrific recipe that can help you achieve both goals.

Black beans are inexpensive and very healthy for you. They contain a high amount of fiber and protein. Black beans are also high in folic acid and magnesium and a good source of potassium and iron, which are all essential nutrients your body needs to function properly.

Because we eat very little beans in our daily diet, we decided to add a lot of flavor and texture with other veggies and a variety of spices to ease into the anticipated taste and texture of a black bean burger. I have to say, we were very pleased with the results. In fact, we will be eating these burgers all year long!

Quick and Easy Black Bean Veggie Burger

After rinsing the beans, coarsely smash them.

Ingredients:
1 15 oz. can of black beans, drained and rinsed
2 TBSP ketchup
1 TBSP yellow mustard
1 tsp onion powder
1 tsp garlic powder
1/3 cup bread crumbs

Add bread crumbs to the mixture.

Optional:
¼ cup diced onions
¼ cup shredded carrots
1 clove of garlic – minced

Instructions:
1. Add your drained and rinsed black beans to a medium bowl and crush with a fork, leaving a few parts of beans visible.

Make 4-6 burgers and chill until ready to grill.

2. Add remaining ingredients and mix well.

3. Score mixture into four sections – by drawing a horizontal line and then a vertical line through the mixture.

4. Take each section and make into a patty – pressing down in the center to allow for expansion when cooking.

Grill for approximately 10 minutes on one side, and 5 minutes on the other.

5. Chill in fridge or freezer for 10 minutes or until ready to grill.

6. On a hot grill or in an oven set at 400 degrees – cook for 10 minutes on one side and then carefully flip and cook for an additional 5 minutes until the outside is a little crusty.

Add toppings/condiments of choice.
