We face the same dilemma every year…what in the world are we going to do with all this leftover turkey?

During the process of making Thanksgiving dinner, we always wonder if we will have enough food to feed everyone. Our 20+ pound turkey just seems so small –that is until it is time to carve it.  Now we are left with several pounds of leftover turkey in our refrigerator to figure out what to do with.

After all the carbohydrates that we consumed over the last several days the last thing on my mind is wanting to make or eat a turkey casserole or a turkey sandwich (ok, maybe one, but that is it!).  In fact, the less time I spend in the kitchen over the next couple of days is ok with me.  That is why this is the perfect leftover turkey recipe.

We use leftover ingredients that we have from our Thanksgiving meal and throw it in a crock pot, add some tomatoes and make Turkey Chili.  We also throw in some bell and hot peppers from the summer’s garden that we have frozen to add a little flavor. This is a great way to use the leftover turkey without spending much time in the kitchen, leaving more time to watch football or go shopping!

Crock Pot Turkey Chili Recipe

Saute onions, peppers, and garlic to give extra flavor before adding it to the chili mixture.

Add remaining ingredients to the crockpot.

Ingredients:
2 lbs of leftover turkey (or ground turkey-browned)
2 large onions – diced
4 stalk of celery – diced
3 bell peppers – diced
4 cloves of garlic crushed and chopped
(optional – 1-2 hot peppers-diced)
2 cans of diced tomatoes with green chiles (10 ozs each)
1 can of chili kidney beans (15 oz) – undrained
1 can of white chili beans (15 oz) – drained
2 cups of water or chicken broth
1 tablespoon of chili powder
1 tablespoon of taco seasoning
1/2 teaspoon black pepper
1/2 teaspoon salt
1 teaspoon hot pepper seasoning (cayenne or Chinese 5 color powder) – optional

Instructions:

  1. Dice up 2 pounds of leftover turkey and place in a large crock pot. If you are using fresh ground turkey, brown the turkey in a large skilled with a tablespoon of olive oil.
  2. In a large non-stick skillet, heat up 1 tablespoon of olive oil over medium heat. Once hot, add in diced onion, celery, garlic and peppers and saute for about 5 minutes, or until tender. Place in the crock pot.
  3. Add remaining ingredients to the crock pot and cook for 5 hours on low, or 3 hours on high.
  4. Serve hot. Adjust heat level per your preference by adding more chili powder, taco seasoning or hot peppers.

    We always make up and big batch of turkey salad. Mixing the turkey, onion, celery, pickles and hard boiled eggs. We do not add the mayo until you are going to eat it. If you do it makes the salad soggy
