5 Zucchini Recipes Other Than Zucchini Bread

We are picking lots of zucchini from the garden.

Although we absolutely love to make our Moist and Delicious Zucchini Bread Recipe, we know there are several other ways to use this healthy vegetable.

Our Zucchini Plants

Every year we plant at least 4 zucchini plants in our raised rows. We get so excited when we see those large yellow blooms in late Spring in anticipation of the first zucchini to emerge.

And it seems like once you pick the first one, they multiply daily.

By early to mid-July we have enough zucchini to not only feed ourselves, but also our family and friends.

Not only did we plant zucchini in our raised rows, we also planted them in a straw bale.

However, this year we have also planted an additional 3 zucchini plants in our Straw Bale Garden.

Therefore, with the additional increase in produce, we had to come up with several zucchini recipes that we wouldn’t typically make.

Our Favorite Zucchini Recipes

Yes, zucchini bread is one of our favorite recipes. You just can’t beat the taste of homemade bread.

However, there are only so many loaves of bread that you can make, eat, give away or freeze.

So what else can you make with Zucchini?

Below you will find our top 5 zucchini recipes that we use in our own kitchen.

1. Zucchini Relish

Beyond popular belief, some of the most delicious relish recipes are actually made from zucchini, not pickles.

My Grandmother always made homemade Zucchini Relish and she shared the recipe with me when I had my very first garden.

Ever since then I have made and canned my own relish. Not only do I use it as a condiment for hot dogs and hamburgers.

I also use it in my deviled eggs, potato salad, and tuna salad recipes.

2. Zucchini Noodles

Zucchini noodles, a.k.a. ‘Zoodles’ are all the health rage right now. It is a low-carb way to replace noodles in any recipe.

In fact, you can find zucchini noodles almost at any restaurant. They are even served at the Noodle & Co. as a substitution for the traditional style noodles.

So how do you make zoodles? The answer is quite simple.

First of all, you must have a spiralizer. We use our Mueller Spiralizer to make the noodles.

Simply cut your zucchini into two pieces. Then attach the zucchini to the handle and crank away!

Within minutes you will have spiral zucchini noodles that you can use in any recipe.

Either saute or boil the noodles until tender, which is typically 3-4 minutes. Add them to any recipe that calls for noodles.

3. Zucchini Parmesan Crisps

One of our favorite zucchini recipes comes in the form of a snack.

We make these zucchini Parmesan crisps in our Air Fryer. They take just 12 minutes to make and are absolutely delicious!

Slice your zucchini in quarter inch rounds. Then dip them in egg and coat them with an equal mixture of Panko breadcrumbs and Parmesan cheese.

Spray them with a little olive oil and cook them in the air fryer at 390°F for 7 minutes. Then flip them and cook for an additional 5 minutes.

4. Zucchini Pizza Boats

Another great recipe for zucchini is Zucchini Pizza Boats.

It is great way to get all of the flavor of pizza but in a healthier form.

The zucchini is hollowed out and your favorite toppings are added in the center.

Throw it in the oven and bake it, or put it in your air fryer, and you have a delicious meal ready in minutes!

5. Zucchini Brownies

Last but not least, one of our very favorite recipes involving zucchini is Zucchini Brownies.

Cake like brownies made with shredded zucchini makes for a tasty dessert any day of the week!

We made ours a little healthier by replacing vegetable oil with natural applesauce.

Plus they are a perfect dessert for those that don’t eat eggs or who are vegan.

Zucchini Brownies

Delicious cake like brownies made with shredded zucchini for the perfect dessert any day of the year.

Ingredients

  • 1/2 cup natural applesauce
  • 1 1/3 cups white sugar
  • 2 teaspoons vanilla extract
  • 1/4 cup water
  • 2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 cups shredded zucchini
  • Frosting, optional

Instructions

  1. Preheat oven to 350°Grease and flour a 8x11 inch baking pan.
  2. In a large bowl, mix together the applesauce, sugar, vanilla and water until well blended.
  3. In another bowl whisk together the flour, cocoa, baking soda and salt.
  4. Stir the dry ingredients into the sugar mixture and then fold in the zucchini. Spread evenly into the prepared pan.
  5. Bake for 25 to 30 minutes or until a toothpick in the center comes out clean.
  6. Let cool and frost if desired.
