Quick and Easy Corn Casserole Recipe

Ingredients

  • 9 ounces of pre-made corn muffin mix
  • 1 15 ounce can whole kernel corn, drained
  • 1 15 ounce can creamed corn (not drained)
  • 1 cup plain Greek yogurt or sour cream
  • 1 stick 1/2 cup melted butter

Homemade Corn Muffin Mix recipe

  • 2/3 Cup Flour
  • 1/2 Cup Yellow Cornmeal
  • 3 Tablespoons Sugar
  • 1 Tablespoon Baking Powder
  • 1/4 teaspoon Salt

Instructions

  1. Preheat the oven to 350° F
  2. In a bowl, mix all of the ingredients together and pour into a greased 8″x 8″ casserole dish.
  3. Cook uncovered for 50 minutes or until lightly browned.

Recipe Notes

Recipe can be doubled and placed in a 9 x 13 dish. Cooking time may need to be extended for 5-10 minutes.
