Classic Macaroni Salad Recipe
A classic macaroni salad recipe that will remind you of the one your grandmother made!

elbow macaroni
cooked

hardboiled eggs
diced

ribs of celery
diced

1
red bell pepper
seeded and diced

¼
red onion
diced

¼
cup
sweet pickle relish

3/4
cup
mayonnaise
-
¼
cup
pickle juice
-
2
teaspoons
sugar
-
1½
tablespoons
Dijon mustard
-
1
teaspoon
garlic powder
-
Kosher salt and freshly ground black pepper
to taste

Green onions or parsley for garnish
optional

To a large bowl add cooked and drained pasta, eggs, celery, red bell pepper and onion.

In a small bowl combine the relish, mayonnaise, pickle juice, sugar, Dijon mustard, garlic powder and season with salt and pepper to taste.

Add to the dressing to the macaroni and toss until evenly coated.

Refrigerate for at least 1 hour before serving.
Add additional salt and pepper to taste and garnish with green onions or parsley (optional).
