Buffalo Chicken Meatballs


  • 1 pound ground chicken
  • 3/4 cup Panko bread crumbs
  • 1 large egg
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 2 green onions thinly sliced
  • Kosher salt and ground black pepper - to taste
  • 3/4 cup buffalo sauce
  • 1/4 cup blue cheese or ranch dressing optional


  1. Preheat oven to 400°F
  2. Line a baking sheet with parchment paper; set aside.
  3. In a large bowl, combine ground chicken, Panko bread crumbs, egg, garlic powder, onion powder and green onions.
  4. Season with salt and pepper, to taste.
  5. Using a wooden spoon or clean hands, stir until well combined.
  6. Roll the mixture into 1 1/4-to-1 1/2-inch meatballs, forming about 24 meatballs. *We use a medium size ice cream scoop to help form consistently sized meatballs.
  7. Place meatballs onto prepared baking sheet and bake for 5-7 minutes, or until all sides are browned.
  8. Place meatballs in a slow cooker. Pour buffalo sauce on top and gently toss to combine. Cover and cook on low heat for 2 hours - stirring occasionally.
  9. Serve immediately, drizzled with blue cheese or ranch dressing, if desired.
