Homemade Vegetable Soup Recipe


  • 3 carrots diced
  • 2 ribs of celery diced
  • 2 medium potatoes diced
  • 1 medium onion diced
  • 1 large clove of garlic minced
  • 4 cups of diced tomatoes
  • 2 1/2 cups chicken broth
  • 2 cups water
  • 1 teaspoon salt
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon ground black pepper
  • 2 cups green beans cut into bite size pieces
  • 1 cup peas we used shelled sugar snap peas
  • 1 large zucchini chopped
  • 1 cup cabbage cut in thin strips


  1. Heat two tablespoons olive oil in a large soup pot.
  2. Add carrots, celery, potatoes, onion and garlic and saute for a few minutes until vegetables begin to become tender.
  3. Add the diced tomatoes, chicken broth, water, salt, pepper, and Italian seasoning. Stir well and bring to a simmer.
  4. Simmer uncovered for about 25 minutes. Then add the corn, green beans, peas, zucchini and cabbage. Bring back to a simmer and continue cooking about 10 minutes, until all the vegetables are tender--be careful not to over cook them.
  5. When the soup is finished cooking, add additional seasonings to your taste (we add cayenne pepper for a little heat).
  6. Serve immediately or freeze to enjoy in the middle of winter.
