Soft and Chewy Protein Granola Bars


  • 2 cups old-fashioned oats
  • ½ cup vanilla protein powder
  • 2 Tbsp. ground flax
  • 1 tsp. cinnamon
  • ¼ tsp. salt
  • ¼ cup almond butter or any natural nut butter
  • ¼ cup honey
  • ½ cup vanilla almond milk or any milk
  • 1 tsp. vanilla extract
  • cup chocolate chips dark chocolate preferred


  1. Preheat oven to 350 degrees F
  2. Spray an 8 x 8 baking dish with non-stick cooking spray - set aside.
  3. In a medium size mixing bowl, combine oats, protein powder, flax, cinnamon, and salt - set aside.
  4. In a small size mixing bowl, combine almond butter, honey, almond milk, and vanilla. Mix until fully combined.
  5. Pour wet mix into dry mix and stir until fully incorporated.
  6. Fold in chocolate chips.
  7. Pour into prepared baking dish. Using a spatula or your hands, spread the mixture evenly in the pan, pressing down firmly.
  8. Bake for 18-20 minutes, until edges begin to turn golden brown.
  9. Remove from oven and let cool in pan for 30 minutes before cutting into bars.
