Overnight Garlic Pickles


  • 5 small cucumbers
  • 1 quart of water
  • 2 tablespoons of pickling or kosher salt
  • 4 cloves of garlic


  1. Place water and salt in a medium sauce pan. Heat on medium low heat, just until the salt has dissolved.
  2. Slice cucumbers to your desired length.
  3. Crush and roughly chop the garlic.
  4. Add cucumbers, garlic and red pepper flakes (optional) to the water.
  5. Place mixture into a bowl or jar. *You want the pickles to be emerged in the water. You will need to place something on top of the mixture to prevent the cucumbers from surfacing to the top.
  6. Place mixture into the refrigerator - let sit overnight.

Recipe Notes

Place pickles in an air tight container, and enjoy for a week (if they last that long!)
