Overnight Bacon Breakfast Casserole

Quick and easy breakfast casserole that is made the night before and ready to cook when you wake up in the morning.

Ingredients

  • 12 slices bread cubed
  • 12 slices crispy bacon crumbled
  • 1/2 medium onion finely diced
  • 1/2 red bell pepper finely diced
  • 4 cups shredded Cheddar cheese
  • 6 eggs
  • 3 cups milk
  • 1/2 teaspoon dry mustard
  • 1/2 teaspoon salt
  • 1/2 teaspoon fresh ground pepper

Instructions

  1. Preheat oven to 300°F.
  2. Cube bread and place on a rimmed baking sheet. Bake in oven for approximately 10 minutes to dry out. You do not want to brown or toast the bread.
  3. In a large bowl, whisk together the eggs, milk, dry mustard, salt and pepper.
  4. In a greased 9 x 13 pan, layer 1/2 of the dried bread cubes and top with 1/2 of the bacon, onions, red peppers and cheese. Repeat the layers in the same order.
  5. Pour egg mixture over top. Cover with foil and refrigerate overnight.
  6. Remove from fridge and let sit on the counter while preheating the oven to 350° F. Bake covered with foil 45-55 minutes or until a knife inserted in the center comes out clean.
  7. You can substitute ham or sausage instead of bacon if desired.

Recipe Notes

Substitute 6 pieces of Texas Toast instead of 12 pieces of bread.
