New York Strip Steak

How to make steakhouse quality New York Strip Steaks - beautifully seared on the outside and moist and juicy on the inside.


  • 2 New York Strip Steaks prime or choice quality, 1 inch thick
  • Coarse salt and pepper to taste
  • 1 TBSP unsalted butter or olive oil
  • 2 teaspoons butter


  1. Allow the steaks to rest at room temperature for at least 30 minutes.
  2. Preheat oven to 425 degrees F.
  3. Trim and season steaks to your taste.
  4. In a cast iron or oven safe pan melt oil over medium-high heat
  5. When hot, sear the steak on each side until you get close to the final color that you want, approximately 3 minutes on each side.
  6. Transfer pan to the preheated oven.
  7. Cook anywhere from 5-9 minutes, depending on how you want the steaks to cook, using a digital thermometer as your guide. Remove from the oven and add 1 teaspoon to the tops of each steak. Allow to rest for a few minutes before serving.

Recipe Notes

As a guide, it took my oven 7 minutes to cook the steak to medium (150 degrees F).
Keep in mind that the internal temperature will continue to rise slightly while it rests.

Steak Temperature Guideline

Medium Rare - 130-140 degrees F

Medium - 140-150 degrees F

Well Done - 160+ degrees F
