Never say never. If you asked either of us a year ago if we would even consider eating a black bean burger, we would have looked at you strangely, and quickly say no! Well, as we continue to grow and learn, we both decided it was time that we gave it a shot.

As the new year continues, many of our readers strive to continue their resolutions to both live healthier and to save money. This is a terrific recipe that can help you achieve both goals.

Black beans are inexpensive and very healthy for you. They contain a high amount of fiber and protein. Black beans are also high in folic acid and magnesium and a good source of potassium and iron, which are all essential nutrients your body needs to function properly.

Because we eat very little beans in our daily diet, we decided to add a lot of flavor and texture with other veggies and a variety of spices to ease into the anticipated taste and texture of a black bean burger. I have to say, we were very pleased with the results. In fact, we will be eating these burgers all year long!
