This classic Cucumber, Onion and Tomato Salad is a refreshing summertime salad that is served at most picnics and gatherings.

It has the perfect balance of tang mixed with a little bit of sweetness that will have you eating this all summer long!

Growing up my parents grew and loved cucumbers. For about 2 months out of the summer, I believe we ate cucumbers at every meal and for every snack!

In fact, there were many times that my dad would head to the garden with a salt shaker and pick a cucumber off the vine and eat it right there!

We would eat them on salads, make overnight pickles with them, and my absolute favorite was the cucumber, onion, and tomato salad!

Of course we ate it as a side dish for both lunch and dinner, but we would often grab a bowl full of it even for breakfast!

We just couldn’t get enough of the cool and refreshing salad, especially on a hot day.

We had what seemed like an endless supply in the refrigerator. As soon as the bowl would become half empty, we would cut up more fresh produce from the garden and use the marinade over several times!

Peeling the cucumbers isn’t necessary, it is a personal preference, especially with my favorite vegetable peeler!

Because cucumbers are ready to pick much earlier than the tomatoes, we would often skip the tomatoes and make this recipe with only cucumbers and onions.

I can distinctly remember my dad eating cucumber and onion sandwiches for a snack before dinner!

But there is nothing better than the complete and tasty combination of cucumber, onion and tomato salad!

There is just enough tang from the vinegar that lets you know it is there. However, the sugar balances out the flavor perfectly.

If you are watching your sugar, you could use a little stevia or honey in place of the sugar. Or you could even add a little rice wine vinegar to give it an alternative sweet and tangy taste.

Cucumber, Onion and Tomato Salad

INGREDIENTS:

3 medium cucumbers, peeled and sliced 1/4 inch thick

1 medium sweet yellow onion, sliced

3 medium plum tomatoes, cut into wedges

1⁄2 cup white distilled vinegar

1⁄4 cup sugar

2 teaspoons salt

1 teaspoon fresh ground black pepper

1 teaspoon fresh dill or mint, optional

INSTRUCTIONS:

I prefer to slice the onion in thin slivers using a hollow edge knife rather than leaving them in whole rounds for easier eating!

1. Combine cucumbers, onions and tomatoes in a large bowl.

2. In a small bowl whisk together the vinegar, sugar, salt and pepper until well incorporated.

3. Pour liquid mixture over top of the cucumber, onions and tomatoes. Toss well.

Refrigerate at least 2 hours before serving.

You can continue to add fresh veggies to the liquid mixture as long as the veggies continue to get coated in the dressing.

Ingredients

  • 3 medium cucumbers peeled and sliced 1/4 inch thick
  • 1 medium onion sliced
  • 3 medium plum tomatoes cut into wedges
  • 1/2 cup vinegar
  • 1/4 cup sugar
  • 2 teaspoons salt
  • 1 teaspoon fresh ground black pepper
  • 1 teaspoon fresh dill or mint optional

Instructions

  1. Combine the cucumbers, onions and tomato ingredients in a large bowl.

  2. In a small bowl combine the vinegar, sugar, salt and pepper and whisk until well incorporated. 

  3. Pour liquid mixture over top of the cucumber mixture and toss well to coate. 

  4. Refrigerate at least 2 hours before serving.

Recipe Notes

You can continue to add fresh veggies to the liquid mixture as long as the veggies continue to get coated in the dressing.

    I have been making this salad for years I keep it in a container in the frig and also use the dressing on my other salads , that way I am always able to make new dressing so it never gets old or week .And none of that other yuckey bought stuff and much cheaper.
