Crock Pot Ground Beef and Potatoes Recipe

Crock Pot Ground Beef and Potatoes is a hearty and delicious meal that consists of seasoned ground beef and potatoes layered with a creamy sauce and then topped with cheese. It is an easy to make meal that is cooked in your slow cooker so that it is ready to eat when you are!

This recipe reminds me of the classic Hamburger Helper boxed dinner called Potato Stroganoff. However, when you make it yourself it is much better and much healthier for you.

But best of all it is a quick and easy dinner recipe that requires just a few ingredients and is fairly inexpensive to make.

Like many of you, sometimes you just need a dinner idea that the entire family will love. But also, a recipe that doesn’t take a lot of ingredients, money, or to be honest a lot of effort.

And that is what makes this recipe so special. All of the ingredients are most likely already in your pantry and refrigerator. Plus it only takes a few minutes to prepare.

Then the slow cooker does all the work for you! When it is time for dinner, you have an entire meal ready!

Of course if you want to make it a complete and balanced meal serve it with a garden side salad or a vegetable of your choice.

How to Make Slow Cooker Ground Beef and Potato Casserole

The first step in making this recipe is to peel your potatoes. We use Russet potatoes for this recipe because they hold up well during the cooking process.

Now slice the potatoes into thin, uniform slices. Using a mandoline slicer will make easy work of this step! Just be sure to use the finger guard that comes with it! I can tell you by personal experience that the blades are very sharp!

Next, brown your ground beef and onions in a large skillet. When the meat is no longer pink, drain the mixture in a colander.

One the ground beef is no longer pink and the onions are tender, drain the grease and add the mixture into the crock pot.

Layer the Ingredients

Then place one half of the meat mixture into the slow cooker which has been coated with non-stick spray. On top of the ground beef and onion layer place one half of the sliced potatoes in the crock pot.

Now, in a mixing bowl, mix together the cream of mushroom soup, milk and seasonings. You can use either store bought soup, or you can make your own Homemade Cream of Mushroom Soup.

Next, pour one half of the milk mixture over top of the potatoes. Then sprinkle half the cheese on top.

Repeat the layers of meat, potatoes, milk, and cheese. Then close the lid and cook on HIGH pressure for 3-4 hours, or LOW pressure for 7-8.

I cook our Ground Beef and Potato Casserole in my Programmable Crock Pot slow cooker. The great thing about this specific machine is that you can program how long that you want the food to cook.

And after the time is up, it will automatically turn to a KEEP WARM setting. Therefore, there is no risk of overcooking your meal!

Before you Serve Your Casserole

About 15 minutes before you are ready to eat, turn off the slow cooker and let your ground beef and potato casserole sit with the lid off. This extra time away from the heat will help to thicken the casserole.

When you are ready to serve, place the casserole on a plate and garnish with sliced green onions.

When you take your first bite, you are going to be shocked at how such a simple recipe can taste so delicious!

Crock Pot Ground Beef and Potatoes

INGREDIENTS

  • 5 small Russet potatoes, peeled and sliced thin
  • 1 1/2 lbs ground beef
  • 1 small onion, diced
  • 1 10.5 ounce can condensed cream of mushroom soup, low sodium*
  • 1 cup milk
  • salt and pepper to taste
  • 1/4 teaspoon cayenne pepper, optional
  • 1 1/2 cups shredded Cheddar cheese

*If you are substituting homemade cream of mushroom soup use 1 1/2 cups in place of the can of soup.

INSTRUCTIONS

Before making this ground beef and potatoes recipe spray your slow cooker with non-stick cooking spray. Then in a large skillet, brown your ground beef and onions. Once the meat is no longer pink and the onions are translucent drain the mixture.

Scoop 1/2 of the meat and onion mixture out of the skillet and place it in the slow cooker. Then add 1/2 of the sliced potatoes on top of the beef mixture.

It is okay if the potatoes overlap somewhat, but you want to prevent them from overlapping each other completely. This will allow each potato slice to cook properly.

In a mixing bowl, combine the condensed cream of mushroom soup, milk, salt, black pepper, and cayenne pepper (if using). Mix until well incorporated.

Add 1/2 of the soup mixture to the slow cooker, pouring it over top of the potatoes. Be sure to try to cover as much of the potatoes as you can.

Then sprinkle 1/2 of the shredded Cheddar cheese on top. Repeat the layers of ground beef, potatoes, sauce and cheese one final time.

Cover and cook on high for 3-4 hours or on low for 7-8 hours or until the potatoes are tender. Check a couple of potatoes by piercing them with a fork to be sure the top layer is nice and tender.

Before serving, turn off the crock pot, remove the lid and let it sit for 15 minutes. This will allow the casserole to thicken before serving.

Store any leftovers in a covered container in the refrigerator for up to 5 days. This ground beef potato casserole does not freeze well.
