Easiest Christmas Cutout Cookie Recipe – No Chilling Required

As we were organizing our Christmas Cookie Tray recipes on the website last week, we realized that we had not yet shared the Easiest Christmas Cutout Cookie Recipe that we make each and every year.

We call it the Easiest Cutout Christmas Cookie Recipe because there is no need to chill the recipe and the cookies are easy to cut. They have a soft texture yet can easily handle a thick layer of icing on top!

During the crazy hustle and bustle of the holiday season we do not have time for lengthy recipes, and definitely no time to wait for dough to chill for hours upon hours before they can be baked.

We prefer to use quick and easy, yet absolutely delicious recipes to include on our cookie trays. See: Cookie Tray Recipes

We will spend one day with family and friends in early December to make and decorate all of our cookie tray recipes.

We then divide them among all of the participants and freeze them for use throughout the holidays. These cookies can be frozen plain or fully decorated.

This dough may appear to be dry at first, but once worked it makes the best cutout cookie dough.

INGREDIENTS:

  1. 1 cup unsalted butter

2. 1 cup granulated sugar

3. 1 ½ teaspoons vanilla extract

4. 1 egg

5. 2 teaspoons baking powder

6. 3 cups all-purpose flour

INSTRUCTIONS:

Roll the dough to 1/4 inch thickness and then cut with your favorite cookie cutters!

Preheat oven to 350° F

1. In a large mixing bowl, add butter and sugar and mix until smooth and creamy.

2. Add vanilla extract and egg and mix until well incorporated.

3. In a separate bowl combine baking powder and flour. Slowly add this mixture to the wet ingredients. Note – the dough will be very stiff and may need to be kneaded by hand if your mixer has difficulty.

To a well floured surface, remove the dough from the bowl with wet hands.

Let your cookies rest on the baking sheet for 5 minutes before transferring them to the cooling rack.

4. Finish kneading the dough by hand, adding additional flour as needed until the dough resembles play-doh.

5. Divide into small sections and roll out onto a floured surface to ¼ inch thick. Use your desired cookie cutters. Add remaining dough to the next section. Repeat process.

6. Transfer to a baking stone/sheet and bake for 6-8 minutes.

7. Remove from oven and let rest on the baking sheet for 5 minutes before transferring to a cooling rack.
