The easiest pickle recipe that you will ever make – Overnight Bread and Butter Pickles!
Have you ever wanted to make pickles but you didn’t want to hassle with the canning process? Or do you have a small batch of cucumbers that isn’t worth hauling out your water bath canner to make one jar of pickles?
No worries!! This recipe is the solution to both of those situations. You can make your own bread and butter pickles in minutes, and there is no canning required!
Fresh Cucumbers
Our cucumber plants are just starting to produce. And that means we have a few cucumbers that we pick every day.
However the first few that we pick we don’t make Overnight Bread and Butter Pickles. We actually slice and eat them fresh out of the garden.
Then we add them to our salads or make Cucumber, Onion and Tomato Salad.
However, within a few days, we begin to stockpile our produce and our kitchen turns into what might resemble a pickle factory.

However, if you have ever made pickles, you know that it is best to wait at least 2 weeks before tasting them.
And for us, sometimes that is just too long! So instead, we turn to our pickle recipes that can be made in the refrigerator, including our Overnight Bread and Butter Pickle recipe!
This means that we can prepare them and soak them in brine overnight and they are ready to eat the next day! Super simple and super easy!
How To Make Overnight Bread and Butter Pickles
All pickle recipes must start with fresh cucumbers. If your pickles are starting to soften, it is best to use them in salads, soups, or Tzatziki sauce.
If you want your pickles nice and crisp, then you must start with fresh cucumbers.
For this recipe, we use 4-5 pickling cucumbers. These cucumbers are the small variety cucumbers that make the best Bread and Butter pickles.
Slice them using a crinkle cutter or a sharp knife. Next slice a sweet onion into thin slices. We use a mandoline slicer to make easy work of this task.
Place both the cucumbers and onions into a large bowl or into mason jars.
In another bowl, mix the pickling brine and pour it over the cucumbers and onions. Then cover and place in the refrigerator overnight.
It is that easy! The next day, your Overnight Bread and Butter Pickles are ready to be enjoyed!

Overnight Bread and Butter Pickles
The perfect mix of sweet and salty pickles that hold a nice crunch and made overnight in the refrigerator.
Ingredients
- 4 to 6 pickling cucumbers
- 1 sweet onion
- 1/2 cup white sugar
- 1/2 cup brown sugar
- 1/2 tsp salt
- 1/2 tsp ground black pepper
- 1/2 tsp mustard seed
- 1/2 tsp celery seed
- 1/2 tsp turmeric
- 1 1/2 cups apple cider vinegar
Instructions
- Slice the cucumbers into thin rounds and slice onions paper thin and place in a large bowl.
- In a separate bowl, whisk together all remaining ingredients and pour over the cucumber/onion mixture.
- Mix to coat.
- Cover and place in the refrigerator overnight.
- Store in air-tight container(s), keeping in the refrigerator for up to one month.
