This past week we were both craving brownies so I went to the pantry and was disappointed to find that we were out of brownie mix.
You are probably thinking of the brownie mix that you find in the grocery store. The one that is in a box on the bottom shelf in the baking aisle, next to the cake mix.
We used to buy those pre-made boxed mixes, but for years now we have made our own homemade brownie mix.
It first happened out of necessity. We were in the middle of preparing a birthday party for one of our boys. He doesn’t like birthday cake, so we decided we would make him his favorite dessert – brownies!
We were busy cleaning the house and preparing the food for the guests who were about to arrive. When we decided it was time that we better get the brownies baking we were shocked to find out that we didn’t have any brownie mix in the house.
There was no time to run to the store, so I pulled out my computer to see what I could make instead.
With just a little bit of research I realized that I had all the ingredients to make my own brownies without a pre-packaged mix.
The homemade brownies turned out amazing and we haven’t bought another box since then!
Because it is so easy to make the brownie mix, we always make extra and store them in air-tight containers. You never know when you are going to need a last-minute dessert!
You can even label the packages with baking directions to give as gifts or to send in a care package to someone special.
Homemade Brownie Mix
INGREDIENTS:
1 1/4 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
2/3 cup unsweetened cocoa powder
2 cups white sugar
Wet ingredients to make brownies:
1 cup melted butter, oil or applesauce
2 eggs
1 tsp vanilla
INSTRUCTIONS:
Dry Mix Instructions
1. Mix dry ingredients together and store in an air-tight container until ready to use.
To Make Brownies
Preheat oven to 350 degrees F
1. In a large bowl add dry ingredients and whisk until all lumps are gone.
2. Add wet ingredients to the dry ingredients and mix until just until incorporated.
3. Grease a 9×13 pan and spread batter evenly into the pan.
4. Bake for 22-25 minutes or until done in the center.
If using a smaller pan, increase cooking time until toothpick comes out clean.
**One hint when cutting brownies — cut them with a plastic knife and not a standard kitchen knife. The plastic knife will keep the brownies from sticking to the utensil while cutting them.

Dry Brownie Mix that can be prepared ahead of time and ready to use whenever you want to make brownies.
Ingredients
- 1 1/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- 2/3 cup unsweetened cocoa powder
- 2 cups white sugar

- 1 cup melted butter, oil or applesauce
