It is a terrific weeknight recipe because you can get them in the oven so quickly. Then by the time you get a few evening chores completed they are ready to come out of the oven.

When I make this for dinner I will make Instant Pot Rice or Air Fryer Baby Potatoes for the side dish when the chicken is in the oven. Or if I am trying to make dinner with fewer carbohydrates I will make Air Fryer Asparagus or Instant Pot Green Beans.

The key here is to let your appliances do the work for you so you can do other things. However, if I am making these chicken thighs for Sunday supper, I may spend a little more time in the kitchen making mashed potatoes or roasted vegetables.

What You Need To Make Honey Mustard Chicken Thighs

Besides the taste, what I love most about this recipe that it requires very little equipment and just a few basic ingredients to make. Below I have listed the items that you will need to prepare this recipe.

  5. Whisk

Ingredients Required:

1. Chicken Thighs

For this Honey Mustard Chicken Thighs recipe it is best to use bone-in, skin-on thighs. The bone provides a ton of flavor to the meat.

And the skin will help protect the chicken thighs from drying out while baking. In addition, the skin will crisp up nicely and give you both great flavor and texture.

However, you can still make this recipe with boneless and skinless chicken thighs. In fact, you can make it with chicken legs, chicken leg quarters or even chicken breasts if you prefer.

Just be aware that different types of meat will have different cook times. For instance, boneless chicken thighs will cook in about 30 minutes.

However, chicken legs and chicken breast will be ready to come out of the oven in 20-25 minutes. As always it is best to use an Instant Read Digital Thermometer to check for doneness.

2. Dijon Mustard

The classic tangy flavor of honey mustard sauce sauce comes from Dijon mustard. Although you can purchase honey mustard sauce at your local grocery, it is very easy to make your own.

However, if you don’t have Dijon mustard and have only standard yellow mustard, you can still make the sauce. Although it won’t be as strong in flavor, it will still be delicious.

3. Honey

It is best to purchase local honey whenever possible. Not only is the honey thicker, it is 100% natural honey.

Although the cost is much more expensive than the squeezable Teddy bear honey at the grocery, it is well worth the cost. Most inexpensive brands of honey have high fructose corn syrup and other fillers added to them during processing.

However, if you are on a tight budget, the Teddy bear honey will still add sweetness to the honey mustard sauce.

4. Extra Virgin Olive Oil

The oil here is used to thin out the honey mustard sauce so that it can be poured over the chicken thighs. Although you can use any neutral tasting oil such as canola or grapeseed oil.

5. Salt & Pepper

As with most chicken recipes, you want to add a little seasoning to the meat itself. Therefore be sure to sprinkle salt and pepper on the chicken thighs themselves.

Then after they come out of the oven feel free to add additional salt and pepper to taste. And if you like a little spice in your food sprinkle on a little cayenne pepper or hot red pepper flakes.

The extra heat is a good compliment to the sweet and tangy honey mustard sauce.

INGREDIENTS

  • 2 pounds bone-in, skin-on chicken thighs
  • 1/4 cup Dijon mustard
  • 3 tablespoons honey
  • 1 tablespoon olive oil
  • Salt and pepper, to taste

Once the sauce has been made pour it over the chicken.

INSTRUCTIONS

Although not absolutely required, it is best to bring the chicken thighs close to room temperature before they go in the oven. However, because this recipe takes only 5 minutes of prep time that would take some advance planning.

Therefore, if you have a chance to do so that is great. If not, proceed with the recipe as instructed.

Preheat the oven to 390°F (199°C). Then spray a baking dish with non stick cooking spray and set aside.

The size of the baking dish will depend on how many chicken thighs that you have. Two pounds of chicken thighs will yield 4-6 pieces.

In a small bowl add the Dijon mustard, honey, and olive oil. Whisk until well incorporated.

When you first start to whisk the mixture will be the color of the Dijon mustard. However as you whisk the honey and oil will blend together making the sauce a pale yellow color. Set the sauce aside.

Place the chicken thighs in the baking dish and sprinkle with salt and pepper, to taste. Then pour the honey mustard sauce over the chicken thighs being sure to coat each piece.

Bake Time Required

Place the dish in the preheated oven and bake for 40-45 minutes, or until an instant read digital thermometer reads 175°F when placed in the thickest section.

When the chicken thighs come out of the oven let them sit for a few minutes. Then drizzle the honey mustard sauce on top when serving.

*It is safe to remove the chicken when it reaches 160°F. However, for tender, fall off the bone chicken let it continue to cook until it reaches between 175°F – 180°F.

*Optional step: for crispier skin, turn on the broiler (leaving the chicken on the same oven rack) for 2-3 minutes, watching closely to prevent excessive browning.

Remove the dish from the oven and let sit for 2-3 minutes before serving. Sprinkle with fresh chopped parsley, if desired.

Notes

*The chicken is safe to be removed from the oven at 160°F. However for fall off the bone tender chicken thighs it is best to let the chicken heat to an internal temperature of 175°F.
